The people of Nevşehir have always loved the meat. The local people don’t even want to eat if it doesn’t have meat in it. So they value it a lot and use it in almost every meal. Ağpakla is one of the best dishes around here. Ağpakla is actually dried beans but this is different. Meat is placed inside handmade pots, combined with dried beans, spices, some oil and tandır bread. Then the pot is placed inside the tandır. You should be patient, because the pot, somehow embedded in fire, will cook slowly for about four hours. It gets out when you are absolutely hungry. When the pot is broken to get the meat inside, a delicious smell fills the room. It takes a long time to prepare and cook it, it takes a few seconds to eat it, but the taste will remain forever.
If you love flour halva, you should try it with eggs! It is a combination of nutmegs, eggs, flour, oil and sugar and it will leave an amazing taste in your mouth for a long time.
You decide if it is kaymak or it is a waffle made of milk, but however you call it, you should absolutely try it! The milk is boiled and put to rest, then it is dried, then some other process come in and it takes five days to prepare it, but do not leave Nevşehir without enjoying this beauty that takes some effort.
Here is another taste that will make you say “Oh, God”. The amazing taste of the meat cooked with dried bones and onions and tomate paste roasted in butter in a pot! I guarantee you that this will be the best soup you will ever have and you cannot get enough of it.
Another legendary desser: Aside… This dessert has a delicate taste like its name, you will want to have more of it as you eat, it is actually made of only three ingredients, but it goes on another level when prepared by master chefs. It would be a waste if you don’t witness the incredible meeting of grape molasses, flour and water.
